Leafy greens like kale, spinach, Swiss chard, cabbage and broccoli are a great source of vitamins A, B and E, minerals like calcium, iron and potassium as well as adding fibre to your diet.
I always steam extra leafy veg and cook a few more potatoes on a Sunday to make my “bubble & squeak”. I serve it on a bed of spinach (more greens), topped with a poached egg (from a friend’s hens in the village. Very fresh) to give me a delicious healthy dinner that’s perfect for Monday – or, as the Monday class know it, No Meat Monday.
It’s a great opportunity to give the gut a rest!
